Chicken Channa pulao recipe👩‍🍳
Ingre****nts (for 1 cup rice)

* 1 cup basmati rice (soaked for 20–30 minutes)
* 250g chicken
* ½ cup boiled chickpeas
* 2–3 tbsp oil
* 1 medium onion (thinly sliced)
* 1 medium tomato (chopped)
* 1 tsp ginger garlic paste
* 2–3 green chilies
* Whole spices: 1 bay leaf, 1 small cinnamon stick, 3–4 cloves, 3–4 black peppercorns, 1 green cardamom
* 1 tsp salt (or to taste)
* 1 tsp red chili powder
* 1 tsp coriander powder
* ½ tsp garam masala powder
* ½ tsp cumin powder
* ½ tsp chili flakes
* 2 cups water

Method

Heat oil in a pan and add sliced onions. Sauté until lightly golden, then add whole spices and cook for a few seconds.

Add ginger garlic paste and cook for 1–2 minutes. Then add chopped tomatoes along with all powdered spices (salt, red chili powder, coriander powder, garam masala, cumin powder, chili flakes). Cook until the tomatoes soften completely.

Add chicken and cook well until it c****es color and is partially done. Then add boiled chickpeas and cook until the oil starts to separate.

Add green chilies and pour in water according to the rice. Bring it to a boil, then add soaked rice. Cook on medium heat until most of the water is absorbed.

Cover and cook on low heat (dum) for 8–10 minutes until the rice is fully done and fluffy.



Raita

Blend coriander, mint, green chili, and lemon juice into a paste. Add this mixture to yogurt and mix well.

Add chopped cucumber and onion, then season with salt and chaat masala. Mix everything together.
