Crispy, high-protein vrat cutlets. Perfect Navratri fasting meal that is filling, balanced, and completely guilt-free.

📋 Ingre****nts for the Cutlets:
1. Bottle gourd (lauki), grated – 1 cup
2. ⁠Low fat paneer, grated – 1 cup
3. ⁠Rajgira (amaranth) atta – ½ cup
4. ⁠Ginger, grated – 1 inch
5. ⁠Green chillies – 2–3
6. ⁠Peanuts, roasted & crushed – 2 tbsp
7. ⁠Salt – 1 tsp or to taste
8. ⁠Fresh coriander – a handful, chopped
9. ⁠Hung curd / thick curd – 2 tbsp

For the Salad:
1. Cucumber, julienned – 1 cup
2. ⁠Peanuts, roasted & crushed – ¼ cup
3. ⁠Pomegranate pearls – ¼ cup
4. ⁠Lemon juice – 1 tsp
5. ⁠Salt – ½ tsp or to taste

👩‍🍳 Directions:
1. In a bowl, add grated lauki, grated paneer, rajgira atta, ginger, green chillies, crushed peanuts, salt, fresh coriander, and curd. Mix well and form a dough.
2. Take lemon-sized portions of the dough and shape them into tikkis.
3. Cook the tikkis on a greased pan until golden brown and crisp on both sides.
4. To prepare the salad, mix all the salad ingre****nts together in a bowl.
