Made this salmon today over garlic mashed potatoes and with edamame and corn succotash! So simple and used leftover corn on the cob!
2 pounds golden potatoes
10 tablespoons of butter
1 brick cream cheese
Salmon filets - as many as your family needs
1 bag shelled edamame
2 ears of corn on the cob
Green onions
1/4 of a white onion

Potatoes:
Instant pot add 1 cup water, seasoning(I used a chicken seasoning) and potatoes steam for 14 mins
Drain water
Add cream cheese, garlic seasoning and 1 stick of butter (8 tablespoons) to potatoes and blend with mixer

Salmon:
Salmon just brush with oil and same chicken seasoning Put in oven on 350 for 15 mins

Succotash:
In a skillet take edamame, corn and onions with 2 tablespoons butter add same chicken seasoning and sauté till warm!

Layer mashed potatoes, salmon, and top with succotash!
