First, I made a paste using red chilli, garlic, cumin, salt and a little water.

Then I mixed this paste with boiled potatoes and added some fresh coriander — and the filling was ready.

For the dough, make sure it is soft — this helps the paratha stay smooth and prevents it from breaking.

Add the stuffing and gently shape it with your hands…
or you can lightly roll it using a rolling pin.

Cook it well with ghee on medium heat until golden brown.
