Ingre****nts used are- Fry some green chillies for a minute in oil
Fry some garlic cloves in same oil
For Besan batter- Besan- 1.5 cups Haldi (Turmeric)- 1 Tsp Ajwain- 1 Tsp Salt to taste Water as required to make the batter (roughly we have used around 2 cups water)
For chura- Dil your fingertips in prepared besan batter. Roughly pour batter in oil and fry until super crispy!
For Sukhi garlic chutney (Red chutney)- Prepared chura- 1-1.5 cups Red chilli powder- 1 Tbsp Hing- 1/2 Tsp Fried garlic cloves- 12-15 pcs Salt to taste Grind the ingre****nts! For Green chutney- Dhaniya (Fresh coriander) - 1 cup Garlic cloves- 4-5 pcs Ginger- 1 inch Water as required Salt to taste
For alloo ka masala, in a pan- Oil- 1 Tbsp Hing- 1/2 Tsp Mustard seeds (Rai) - 1 Tbsp Jeera (Cumin)- 1 Tosp Kadi leaves- 15-20 leaves Boiled potatoes- 4-5 pcs
Now, coarsely grind- Garlic- 5-6 cloves Ginger- 1-2 inch Green chillies- 3-4 pcs Salt to taste Garam masala- 1 Tsp Turmeric (Haldi) - 1 Tsp Salt to taste Some fresh coriander (Dhaniya)
Once cooled down, make vada balls out of the prepared alloo ka masala! Dip the vada balls in besan batter and fry on medium flame!
